Chef style salad with a creamy tang.

Simple chicken and ham elevated by a zesty dressing makes this Pittsburgh staple a great addition to your next salad bar night.  The days of watching yellow slivers of goodness tumble to the bottom of the bowl come to an end by adding the chopped egg to the dressing.

Ingredients

Ingredients for the salad and dressing

Chicken

saute chicken with salt and pepper.

Add-ins

Dice ham, tomato and mince egg.

Dressing

Mix dressing and fold in minced egg.

Lessons Learned

Swiss is too mild a cheese to stand up to the smoked ham and pepper jelly.  Next time I would either leave it off or go with a smoked cheese… or I might just be starting a smoked Gouda phase?

Leftover lemon pepper or BBQ chicken would work just as well.

Tomatoes are not in season yet and a nice ripe small local grown (picked ripe not green) would be a great contrast to the tang of the dressing.

Light spices and thin sauce let the diverse flavors shine.

Light spices and thin sauce let the diverse flavors shine.

The original author had this German Farmer’s Salad (Bauernsalat) on Christmas Eve while visiting her mother.  Try and make this at least a day ahead as the sauce was very light, not even noticeable the first day, but on the second day it melds into a nice balance. I was able to find imported German bologna at my local Wal-Mart Superstore, but not my local grocery store or butcher shop. This is a very large recipe and could easily be split down several times.

Finished Scotch Eggs

Blanket your Easter eggs in the sausage of your choice.

British street food makes for a great mid-week grab and go option that can feature other DIY food projects.  I used my own mild Italian sausage mix and bread crumbs from leftover whole wheat Easter dinner rolls.  If you use a commercial sausage they will have a higher fat content, more shrinkage away from the egg and look like the original recipe at Scotland’s Enchanted Kingdom. To create a scotch egg that is not made of grey mystery meat may go against tradition (Consider the Scotch Egg) but makes for a tastier nosh.
