River Watch Week – Vicksburg District Vittles – Mississippi River Chicken and Dumplings

With the Army Corps of Engineers taking the Flood Fight 2011 – Operation Watershed down river we will take a culinary tour of the affected areas:

Creamy Chicken Goodness

Creamy soup, moist chicken, and chewy soft dumplings.

The original recipe from RecipeArchive.net calls for boiling a whole chicken, picking off the meat and building the soup with Cream of Chicken soup.  Here I have used leftover white meat from a previous post (2 May 2011 Dinner News – Abbottabad, Pakistan) and created a simple milk gravy in place of the canned soup.

If you have 6 people to serve this is a great single meal.  If not, I have included my method for individually freezing dumplings and storing the soup in separate containers for later use.

From Cairo, Illinois in the North to the mouth of the White River in Arkansas the Army Corps of Engineers Memphis District is the center of  as levees are blasted and the Mississippi spills from its banks.  Here are some suggestions on local fare you might find as you travel the Great River Road.

Celebrate Mexico's triumph with dishes the French left behind.

The Menu

Today marks the victory of Mexico over the French but is often celebrated with Tex~Mex classics.  Change it up this year and bring the wonderful baked goods, cream sauces, and squash blossoms to your dinner table or margarita party.

Appetizer

Crepas de Flor de Calabaza – Crepes filled with squash blossoms and covered in a poblano cream sauce.

Memelas with Queso Fresco and Charred Tomato Sauce – Small hand-made tortilla disks with seasoned tomatoes and cheese.

Tinga – Fried chicken tortilla rolls.

Entree

Guisado de chambarete –  Stewed beef in potato, corn and chayote.

Simple chicken and ham elevated by a zesty dressing makes this Pittsburgh staple a great addition to your next salad bar night.  The days of watching yellow slivers of goodness tumble to the bottom of the bowl come to an end by adding the chopped egg to the dressing.

Ingredients

Ingredients for the salad and dressing

Chicken

saute chicken with salt and pepper.

Add-ins

Dice ham, tomato and mince egg.

Dressing

Mix dressing and fold in minced egg.

Lessons Learned

Swiss is too mild a cheese to stand up to the smoked ham and pepper jelly.  Next time I would either leave it off or go with a smoked cheese… or I might just be starting a smoked Gouda phase?

Leftover lemon pepper or BBQ chicken would work just as well.

Tomatoes are not in season yet and a nice ripe small local grown (picked ripe not green) would be a great contrast to the tang of the dressing.

Making tahini isn’t as straight forward as you would think.  Just trying to grind up sesame seeds leaves you with more husk than paste.  This recipe is for a saucy version and not a “store for later” stiffer mix.

High level officials of Pakistan and India are meeting today ahead of the Cricket World Cup match where the two countries will face off with both Prime Ministers in attendance. As the peace talks seem to be gaining traction let’s take an evening to enjoy the culture of these neighbors and prepare a Falooda for your next sporting celebration.

The Meal

Entree

Beef Curry with Basmati Rice – No curry paste here… mix from scratch way to learn to build a curry.

Masala Roasted Chicken Kurma – Tomato gravy with raisins, nuts, and herbs.

Kerala Fish Biryani – Curry leaves and Fish Masala powder can be found at asian and middle eastern markets or online.  Great recipe for building a pantry that can make a continent worth of recipes.

Side Dish

Dahi Baray – Daal fritters soaked in yogurt and garnished with your choice of chutney and masala.

Phool Gobhi Salad – Cabbage, carrot, and peanuts.

Raita – Yogurt and vegetable salad sometimes used as a condiment.

Dessert

Gulab Jamun – Sweet fried balls milk balls in cardamom and rose-water syrup.

Falooda – Ice cream float with optional jello cubes and fruit… but also contains pasta… a must try!
